About this recipe

These Three-Cheese Jalapeño Popovers are everything you love about classic popovers. They are light, airy, irresistibly steamy, but with a bold, savory twist. A blend of cheddar, Monterey Jack, and Parmesan melts into the batter, creating pockets of creamy richness and golden, toasty edges. Fresh jalapeños add just the right amount of heat and brightness, balancing the buttery depth of the cheeses without overwhelming the delicate rise. They bake up beautifully tall with a soft, custardy center and a perfectly crisp shell. Serve them warm for brunch or with your chili. They are perfect holiday side that always please a crowd!

Key Ingredients

Jalapeno – For a nice kick and a little bit of spicy flavor.

Cheese – Adds a creamy and savory richness.

Eggs– Provides structure for that signature puff!

Olive Oil – An essential fat that helps the popovers brown and stay tender.

Milk – For additional moisture and steam which contributes to the popover’s rise!

FAQ’s

This could be due to many factors including too low oven temperature, opening the door too early or the batter was undermixed. Keep an eye on the popovers while they are baking- you will want to see golden, tall popovers before you open the door and remove.

You can, however, I recommend baking up right before serving a meal- for maximum fluffiness! You can whip up the batter, cover and place in the fridge overnight or for a few hours. Just remove the batter from the fridge to rest at room temperature before going into the oven. The batter should not be cold going into the oven. Pro tip: Give the batter a good whisk before pouring into the popover compartments, as the batter can separate after sitting in the fridge overnight.

Don’t skip the step of brushing the pan with a little oil baking. Its also important to keep that high heat in the oven (450) without opening the oven door until the popovers are super tall and golden brown.

Helpful tips

Here are some important Pro tips by Maude

  • Use room-temperature ingredients– Eggs and milk should be at room temperature so the batter incorporates evenly and rises well. Cold ingredients can make popovers dense.
  • Don’t overmix the batter– Mix just until all dry ingredients disappear. Overmixing develops gluten and can make the popovers tough instead of light and airy.
  • Preheat popover pan – Don’t skip the step of placing your popover or muffin tin in the oven before pouring in the batter. Pouring batter into the hot pan with oil helps them spring up immediately.

Ingredients

Popovers

  • 3 cups (720 ml) whole milk
  • 8 large eggs
  • 1 tsp (6 g) salt
  • 1 tsp (4 g) sugar
  • 3 cups (360 g) all-purpose flour, (not packed, spooned & leveled)
  • 6 tbsp (88 ml) extra virgin olive oil, plus more for greasing the pan
  • 1.5 oz (43 g) cheddar cheese, shredded
  • 1.5 oz (43 g) monterey jack cheese, shredded
  • 2 jalapenos, seeded and diced
  • Parmesan for topping
  • Butter & Honey for topping

Instructions

Enable Step-by-Step Mode
  • For the popovers, In a large bowl, using a hand mixer or whisk, mix flour, milk, olive oil, salt, sugar and eggs. Add the jalapenos. Mix gently but well. A few lumps are okay! Let the batter rest for about 10 minutes. (Note: see FAQs for more details about making the batter beforehand.)
  • Preheat oven to 450 degrees and liberally grease a popover pan with olive oil. (Muffin pan also works) Note: When greasing the pan, I like to add about a tsp of olive oil to the bottom of each popover compartment. Then , I like to oil my fingers or a napkin and make sure the sides of each compartment are nice and greased up! Then place the popover pan onto a large baking sheet (to catch any drippings) and then into the oven to heat for about 3 minutes.
  • Remove pans and immediately divide/pour batter into the compartments of the pan (I fill my popover compartments about 3/4 of the way). Press some of the shredded cheese mix in each compartment filled with the popover batter. And sprinkle a little more of the shredded cheese on top, along with the parmesean.
  • Bake for about 25 minutes at 450 degrees. Then turn down the heat to 350 degrees and bake for an additional 5-10 minutes. (try not to open the oven or that will release all of the steam and the popovers could deflate!)
  • Remove popovers from the oven. Then, using a toothpick, poke the tops of each popover so they can breathe (this also keeps the popovers from deflating). Popovers should easily slip out of the pan. Once you have removed the popovers, add more olive oil to the pan and place it back in the oven for 3 minutes, then pour the second batch of popover batter and bake.
  • Once baked, serve immediately with butter and honey.
  • Storage: Store in fridge in an air tight container for up to 2 days. To reheat, place popovers onto a baking sheet and bake at 350 for about 10 minutes or until warmed through.

    1. Hi Geri,

I actually use a popover pan but either size muffin pan will work- you will just want to fill each vessel up about 3/4 of the way if that makes sense! I hope that helps! I have the popover pan linked in the equipment needed sections! Let me know if you have any other questions! Thanks for your question!
