Perfect Fudge Brownies

Prep Time: 15 min
- 3/4 cup (172 grams) unsalted butter, softened
- 3/4 cup (150 grams) granulated sugar
- 3/4 cup (150 grams) packed, light brown sugar
- 3 large eggs, room temp
- 1 1/2 tsp (7.5 grams) vanilla extract
- 5 tbsp cocoa powder (27 grams)
- 3/4 cup (97 grams) all purpose flour, (see note below about measuring flour)
- 1/4 tsp salt (1.5 grams)
- 3/4 cup (128 grams) semi sweet chocolate
- 1/3 cup (60 grams) semi sweet chocolate chips(for topping the brownies, just before baking)
- To ensure your brownies come out of the pan after baking, grease your pan well and lay a strip of parchment paper in the pan. This will help you lift the brownies out of the pan later.
- When measuring your flour, be sure not to scoop your measuring cup into the flour (that is too much flour!) You want to spoon your flour into your measuring cup (spoonful by spoonful) until the cup is full. Then use a knife to scrape off the top, excess flour. This tip will ensure that you are not using too much flour in your recipes.
- When whisking your eggs with the chocolate, sugars and butters, it’s important to mix fast and vigorously. This method helps create that perfect crinkle on the top of the brownies. When you mix the sugars with melted fat (the butter) it creates an emulsion or strong bond. And that emulsion rises to the top of the brownies during the baking process. SCIENCE!

What to do
1. Preheat oven to 350 degrees. Grease and 8×8 pan with butter and line with parchment paper (*see note below).
2. In a heatproof mixing bowl, add butter and chocolate. Heat the bowl in the microwave for about 1 minute. Stir and then heat for one more minute if mixture is not melted. Let the butter and chocolate cool after melting.
3. Add sugars and mix everything with a hand whisk. Add the eggs and mix vigorously for about 2 minutes (*see note below).
4.Add vanilla extract, mix and then sift in the remaining dry ingredients. Fold everything with a rubber spatula until there are no streaks of the dry ingredients. Pour the brownie batter into the prepared pan, sprinkle the top with chocolate chips and bake for about 25-30 minutes. I start to check the brownies at about 20 minutes because ovens can vary! The edges should be set and the middle should have a slight jiggle. Thats when you know they are done! Allow brownies to rest and cool for at least 1-2 hours. Then you can lift the parchment paper up and carry the brownies out of the pan. Slice into desired sizes.
