About this recipe

This recipe is a tribute to the celebrated Whole Foods Berry Chantilly Cake, reimagined as a beautiful, easy-to-serve trifle. Because lets face it- while they are wonderful, sometimes we just don’t have the time or patience to put together a cake. If you are new to baking or short on time, this trifle is definitely for you!

This trifle has all the flavors the memorable flavors of a classic chantilly cake—light, tender vanilla cake, fresh berries, and a luscious mascarpone cream—but layered together in a dessert that’s perfect for sharing. Instead of frosting and stacking a traditional layer cake, this trifle comes together with cubes of tender vanilla cake, juicy strawberries, raspberries, and blueberries, and a silky mascarpone cream cheese frosting that’s light, creamy, and packed with vanilla flavor. Every spoonful is filled with the perfect balance of soft cake, fresh fruit, and rich cream. And I don’t know what it is about a trifle, the assembly and textures just make desserts better! But try it for yourself and let me know what you think!

Key Ingredients

Soft Vanilla Cake — Tender vanilla cake creates the foundation of this trifle, soaking up the berry juices while staying soft and fluffy. I personally think a homemade vanilla cake works beautifully here.

Fresh Berries — A combination of fresh strawberries, raspberries, and blueberries adds vibrant color, natural sweetness, and juicy flavor in every layer.

Lemon Zest — A touch of fresh lemon zest brightens the berry filling and enhances the natural sweetness of the fruit. It helps balance the richness of the mascarpone cream and somehow makes the berry flavors taste even more vibrant.

Raspberry Jam — High-quality raspberry jam is folded into the berries and brushed onto the cake, adding concentrated berry flavor and keeping the cake wonderfully moist.

Mascarpone Cheese — Gives the frosting its rich, silky texture and signature creamy flavor that’s reminiscent of a classic Chantilly-style cream. I honestly, want to start using this in other frostings, it is so delicious!

Cream Cheese — Full-fat cream cheese adds structure, richness, and a subtle tang that balances the sweetness of the frosting. Combined with the mascarpone, it creates a smooth, stable cream that’s light enough for layering while still holding its shape beautifully.

Vanilla Bean Paste — Infuses the frosting with deep vanilla flavor and beautiful flecks of real vanilla bean, making every bite taste extra special.

Heavy Whipping Cream — Cold heavy whipping cream is whipped into the mascarpone mixture to create a light, fluffy frosting that’s perfect for layering.

Salt — Just a small pinch of salt enhances the sweetness of the berries and rounds out the flavors in both the filling and the frosting.

FAQ’s

Using both mascarpone and cream cheese gives this frosting the best of both worlds. Mascarpone provides a rich, silky texture and delicate buttery flavor, while cream cheese adds structure and a subtle tang that balances the sweetness. Together, they create a light, fluffy frosting that’s sturdy enough for layering in a trifle while still tasting luxuriously creamy.

Yes! This trifle is an excellent make-ahead dessert. Assemble it up to 24 hours in advance and refrigerate until you’re ready to serve. The cake softens slightly as it chills, making each bite even more delicious.

Honestly, I wouldn’t. Fresh berries are recommended for the best texture and presentation. Frozen berries tend to release excess liquid as they thaw, which can make the trifle watery

A soft vanilla cake is ideal. You can use my Vanilla White Velvet Cake recipe, your favorite homemade vanilla cake, or a high-quality store-bought vanilla cake.

Brushing the cake with raspberry jam adds moisture and an extra layer of berry flavor. It also helps the cake stay soft after chilling.

Store the trifle covered in the refrigerator for up to 3 days. While it’s best enjoyed within the first 24–48 hours, the flavors continue to meld as it chills.

The most common causes are an underactive sourdough starter, cutting the bulk fermentation short, or underproofing before baking. Sourdough relies on fermentation rather than commercial yeast, so patience and visual cues are critical here.

Yes. Chilling the trifle for at least 4 hours (or overnight) allows the flavors to meld, the cake to absorb some of the berry juices, and the frosting to set, resulting in the best texture and flavor.

Helpful Tips

Don’t skip brushing the cake: Brushing the cake cubes with raspberry jam adds moisture and intensifies the berry flavor throughout every layer. It also helps the cake stay flavorful after chilling.

Let the berries sit briefly: After mixing the berries with jam, lemon zest, and salt, let them rest for 10–15 minutes. This helps the juices release and creates a naturally flavorful berry syrup.

Soften the mascarpone and cream cheese properly: Both should be fully softened to room temperature before mixing. This ensures a smooth, lump-free frosting that folds easily with the whipped cream.

Fold gently for a light texture: When combining the whipped cream with the mascarpone mixture, fold gently to keep the frosting airy and fluffy rather than dense.

Assemble with intention: If using a trifle dish, press each layer slightly toward the edges so the beautiful layers are visible from the outside glass.

Chill for best results: Refrigerating for at least 4 hours allows the cake to soften, the berries to release their juices, and the flavors to fully develop into a cohesive dessert.

Serve cold: This trifle tastes best straight from the refrigerator when the cream is set and the layers are clean and defined.

Note before beginning: This trifle is designed to be made with a ready-to-use baked vanilla cake, making it quick and easy to assemble. You can use my homemade vanilla (white velvet) cake baked ahead of time or a good-quality store-bought vanilla cake.
  • Cut the baked vanilla cake into 2-inch cubes. Using a pastry brush, lightly brush each cube with the raspberry jam. This adds moisture and an extra layer of berry flavor.
  • In a medium bowl, gently combine the sliced strawberries, raspberries, blueberries, raspberry jam, lemon zest, and a small pinch of salt. Toss carefully until the berries are evenly coated. Let the mixture sit for 10–15 minutes to allow the juices to develop.
  • In a large mixing bowl, beat the softened mascarpone and cream cheese until smooth and creamy. Then add 1 3/4 cup powdered sugar, vanilla bean paste and beat again until the mixture is smooth.
  • In a separate bowl using a hand mixer, (or stand mixer with whisk attachment) whip the cold heavy cream until medium/stiff peaks form.
  • Gently fold the whipped cream into the mascarpone mixture in two to three additions until fully combined and fluffy. Taste and adjust the sweetness with additional powdered sugar (add another 1/4 cup) if desired.
  • In a large trifle dish (or individual serving glasses), layer the ingredients in the following order: a thin layer of frosting (this helps keep the first layer of cake in place), then cake cubes, berry filling, then frosting. Repeat the layers until all the ingredients have been used, finishing with a generous layer of frosting on top.
  • Note: If you're using my Vanilla White Velvet Cake recipe, you'll have three 6-inch cake layers. I use approximately one cake layer per trifle layer, resulting in three beautiful layers in the finished trifle.
  • Decorate the top with fresh berries, if desired (it makes for a beautiful presentation!). Refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the cake to soften. Serve chilled and enjoy!
