Sometimes, all you need is one really good cookie—and this red velvet one totally delivers. Soft, chewy, and loaded with creamy white chocolate chips, it’s everything you love about red velvet cake, just in cookie form. That rich cocoa flavor? Check. That eye-catching red color? Absolutely. And the slightly tangy, sweet bite? Oh yeah. This single red velvet cookie is perfect when you're not in the mood to share or just want a quick treat without committing to a whole batch. Ingredients

Equipment Needed

Cookie

  • 3 tbsp (42 grams) butter, softened
  • 2 tbsp (25 grams) granulated sugar
  • 3 tbsp (37 grams) brown sugar
  • 1 egg yolk
  • 1/2 tsp (2 grams) vanilla extract
  • 1/4 tsp (1 gram) cornstarch
  • 4 tbsp (30 grams) flour
  • 2 1/2 tbsp (19 grams) cake flour
  • 1 1/2 tbsp (8 grams) cocoa powder (hershey’s special dutched)
  • 1/8 tsp (.75 grams) salt
  • 1/4 tsp (1 gram) baking soda
  • 3-4 drops red food gel
  • white chocolate chips (measure with your heart)
  • semi sweet chocolate chips (also measure with your heart)

What to do

1. Place butter and sugars in a medium bowl. Mix well with a rubber spatula. Add egg yolk and vanilla. Mix until combined.

2. Sift in dry ingredients, except both chocolate chips. Mix well until just barely combined. Add chocolate chips. Mix again.

3. Form dough into 2 balls (or one large ball like seen in IG video) and place on a cookie sheet lined with parchment paper. Place cookie sheet in fridge for at least 30 minutes (no need to cover the dough). (Note: While a single serve cookie is supposed to be fast option, if you are looking for a tall and thick cookie, I highly suggest chilling the dough overnight in the fridge. This will help the flour hydrate and provide more structure to the cookie(s) while baking. Before baking, as seen in the IG video, try and make your dough as tall as possible. This will assist in a thicker cookie)

4. Preheat oven to 375, remove cookie(s) from fridge and rest at room temperature for about 10 minutes. Then bake for about 11-12 minutes, or when edges are dark and set and the top of the cookie(s) looks puffed up but slightly underdone (note: if baking one large cookie, the bake time will be about 14-16 minutes) . Top with more chocolate chips and sea salt warm out of the oven. And enjoy! INHALE warm or at room temperature!


*Pro tip: You can reheat your cookie(s) at 350 degrees for about 5 minutes. This gives your cookies that fresh baked taste again!

Yes you can make the dough in advance. I recommend scooping the dough first, and then sealing them in a ziplock bag (push all of the air out of the bag before freezing). The dough can keep in the freezer for up to 1 month. Once ready to use, remove the frozen dough from the freezer and let it thaw in the fridge overnight. Then bake according to instructions!

  • If you like a thinner crispy cookie, I definitely recommend splitting the dough into 2 or even 3 cookies.
  • I HIGHLY recommend using a high quality cocoa powder and chocolate chips. I swear by ghirardelli.
  • Chilling cookie dough is a sure way to improve the flavor of your cookies! The chilling process allows the flour to moisten and the sugars and butter to get acquainted… which creates an almost butterscotch/caramel-like flavor to your cookies! In this recipe, I advise chilling the dough for about 30 minutes (uncovered) before baking. Overnight if you can wait that long!!
  • I often bake ugly looking cookies (LOL). To avoid and ugly single serve cookie, grab a soup bowl and place it over the cookie- give it a nice swirl, which helps the cookie return to a circular shape. Its a bomb technique, and no skill required!
