Oreos and gummy worms in every bite

Prep Time: 20 min
- 1/2 cup softened unsalted butter
- 2/3 cup light brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- 1 1/2 cup all purpose flour
- 1/2 cup dutch process cocoa powder
- 3/4 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp cornstarch
- 1/2 tsp salt
- 1/2 tsp espresso powder
- 1/2 tbsp hot coffee
- 1 cup oreo crumbs, plus extra for sprinkling (*see note)
- 1 cup butter
- 2 oz melted chocolate, cooled
- 3-4 tbsp whipping cream
- 1 tsp vanilla
- Pinch of salt
- 2 1/2 – 3 cups powdered sugar (*see note)
- 2 tbsp dutch process cocoa powder
- Gummy worms for garnish
- For the oreo crumbs, you can use a food processor! Place oreos in food processor and pulse until crumbs are fine. If you don’t have a food processor, placing them in a ziplock bag and pounding them with a rolling pin (or something heavy) works too! Tis a good stress reliever!
- You will not be able to taste the coffee or the espresso powder in these cookies. These two ingredients simply amp up the chocolate flavor.
- Everyone’s palette is different so taste your frosting as you go! Use as much or as little powdered sugar as you want!

What to do
1. For the cookies, sift all dry ingredients into a medium size bowl. Set to the side.
2. Using a stand mixer, with whisk paddle attachment, beat sugars and butter for 1-2 min.
3. Add vanilla and egg, gently mix.
4. Add dry ingredients into sugar and butter mix. Mix gently with the paddle attachment, or spatula. Then pour in hot coffee and oreo crumbs. Mix until just barely combined. Cover and chill for 3-24 hrs (*see note).
5. Preheat oven to 350. Scoop cookie dough into roughly 8-10 balls. Place cookies (two inches apart) on a baking sheet lined with parchment paper. Bake for 10-12 min. When the cookies are puffed up and edges are set, take them out of the oven. They will continue to bake and set as they cool. Sometimes the cookies spread, so you can use a round cookie cutter to mold them back into shape!
6. For the frosting, using a hand mixer, mix butter and melted chocolate until smooth. Alternate adding cocoa powder and powdered sugar. Add vanilla and whipping cream. Mix until frosting consistency is smooth.
7. Assemble cookies! You can frost the cookies with a knife or you can use a piping bag with (or without) a frosting tip and pipe the frosting. Sprinkle with more oreo crumbs and add some gummy worms on top! Cookies can be stored at room temperature (or fridge) for up to 3 days.
