Mom’s Brown Butter Chocolate Oatmeal Cookies

- 1 stick unsalted butter, softened
- 1 1/2 cup granulated sugar
- 1/2 cup light brown sugar packed
- 1/2 cup whole milk + 2 tbsp
- 4 tbsp cocoa powder
- 2 tsp vanilla extract
- 3 cup dry quick oats
- pinch of salt
- handful chocolate chips (about 1/4 cups, your choice!)

What to do
1. Easiest cookie ever! To brown the butter, place butter in a medium saucepan over medium low heat and melt. Continue to cook until butter starts to foam and release a fragrant odor. It will smell nutty and glorious! Keep cooking until butter turns brown then remove from the heat, pour immediately into a heat safe bowl. Let the butter cool. As butter is cooling, add 1 1/2 tbsp of softened butter to the brown butter (this helps add moisture back into the browned butter!). Then all ingredients (except chocolate chips and vanilla) into a saucepan. Cook over medium heat for about 1 minute, mix thoroughly. Remove from heat.
2. Add chocolate chips and vanilla. Mix until everything is combined. Using a spoon or ice cream scoop, drop cookies onto wax paper (make sure your wax paper is on a baking sheet or cutting board, you need a hard surface!). Plop a few more chips on top (they melt into the cookies and make a heavenly gooey topping!) Wait for about 30-40 minutes for cookies to set (you can also try placing cookies in the fridge to help them set up). Store at room temperature (or fridge) in a sealed container (for freshness!) for 2-3 days.

- I really like using fine oats for this recipe but it is totally up to you! I also believe that quick oats work the best in this recipe.
