What you need
Pumpkin Energy Bites
1 cup Oat or Almond Flour
1/4 cup Nut Butter
1/4 cup Maple Syrup or Honey
1/4 cup Pumpkin Puree
10 Medjool Dates
1 teaspoon Vanilla Extract
1 pinch Sea Salt
1 teaspoon Pumpkin Spice
Chocolate Chips
What to do
1.
Add all ingredients (except chocolate chips) to a food processor. Blend until mix is incorporated and smooth.
2. If the mix looks and feels too wet to roll into balls, add a tbsp of flour. – Divide and roll mix into 10-12 balls. Freeze for at least 2 hours.
3. Form into desired shapes. – Keep in freezer for up to 2 months. Keep in fridge for 3 days.

You can use whatever flour you desire for this recipe! I used oat and almond the first couple of tries, and both are delicious. I would imagine that GF flour will work perfectly!
I also swap honey for maple syrup if I am running low. You can go wrong with either, they both are delicious.
Warning, check your dates before blending. Dates have pits and can be a choking hazard… and they can be insanely rough on your food processor if you don’t pit them! (I know unfortunately, from experience!)
