Ingredients

Equipment Needed

Rice Krispies Treats

  • 1 stick butter + 2 tbsp
  • 12 oz mini marshmallows, divided
  • 6 cups rice cereal
  • pinch salt
  • 1/2 tsp vanilla extract

What to do

1. Over medium/low heat, place the stick of butter in a saucepan, melt and cook. Continue cooking until butter foams and releases an aromatic, nutty smell. Butter should be turning a golden color at this point. When you see brown bits, remove from the stove top, and pour butter into a larger pan, or dutch oven.

2. Grease an 8×8 square pan with butter. Place the other 2 tbsp of butter into the pan/pot with the brown butter. Mix until melted. Add 10 oz of marshmallow to the pan, reserve the other 2 oz for later. Using a spatula, stir marshmallows and butter until mix is smooth.

3. Remove pan from the heat, add salt and vanilla. Pour in cereal and mix. Add the remaining marshmallows to the mixture. Smooth half of the mixture into the prepared pan. Add to the pan about 6 tbsp of salted caramel. Top with the remaining cereal and press the cereal down with a spatula. Rest for 15-20 minutes and then slice and enjoy.

FAQ’s

This usually happens when the marshmallows or butter are overheated. Melt them low and slow over low heat — never let the mixture boil. Once they’re just melted, remove from heat immediately.

Use fresh marshmallows. We want to pack the treats tightly into the pan but don’t press too firmly into the pan. Store in an airtight container at room temperature. Add an extra handful of mini marshmallows at the end (per instructions) for extra gooeyness!

Yes, however, butter does have the best flavor! Butter and margarine and oil are 1:1 for replacement!

  • Use fresh marshmallows, old or stale marshmallows don’t melt smoothly and can make your treats stiff or dry.
  • Always melt the butter and marshmallows over low heat. High heat makes the sugar cook too much, leading to hard, dry bars.
  • To avoid sticky messes, butter your hands or spatula before pressing, butter the pan, or you can use parchment for easy removal.
  • Feel free to add mix-ins! Chocolate chips and other candies work great!
