Berries & Cream Dutch Baby

Prep Time: 15 min
- 2/3 cup whole milk
- 1/2 cup flour + 1 tbsp
- 2 tbsp granulated sugar
- 1 tbsp powdered sugar
- 3/4 tsp vanilla
- 3 eggs
- 2 1/2 tbsp olive oil
- 3 tbsp unsalted butter
- Berries (your choice)
- Whipped cream
Bake Time: ~25 min
Yields: 5-6 servings

What to do
1. In a large bowl, whisk all ingredients except butter, berries and whipped cream. Whisk everything until smooth. Cover and place in fridge for 30 minutes (up to 1 day).
2. Remove dutch baby batter from fridge. Preheat oven to 425. Once oven temp is set, place butter in a 10 inch cast iron skillet. Place the skillet in the oven for about 10 minutes until butter has melted and is sizzling.
3. (Move quickly at this step) Remove cast iron from oven. Careful its very hot! Pour dutch baby batter into the skillet. Place skillet back into the oven and bake for about 17 minutes. Turn oven temp down to 350 and bake for another 5-7 minutes. The middle and sides should be puffed up and golden brown.
4. Serve immediately with fresh berries, whipped cream and syrup if desired! Enjoy! See notes below for additional tips!

Here are some important Pro tips by Maude
- When measuring your flour, be sure not to scoop your measuring cup into the flour (that is too much flour!) You want to spoon your flour into your measuring cup (spoonful by spoonful) until the cup is full. Then use a knife to scrape off the top, excess flour. This tip will ensure that you are not using too much flour in your recipes.
- I highly recommend using a cast iron skillet in this recipe. The cast iron skillet can hold high heat and really makes the texture of this dutch baby. I got mine off of amazon, and for a good price!
