Chocolate Chip Banana Bread Waffles

- 2 1/4 cup flour
- 1 tbsp baking powder
- 1/4 cup granulated sugar
- 1 tsp salt
- 1 1/4 cup milk
- 1 ripe banana
- 3 eggs separated
- 1/3 cup extra virgin olive oil (or 5 oz melted and cooled butter)
- 1 tsp vanilla
- chocolate chips
- maple syrup
Bake Time: ~25 min
Yields: 5-6 servings

What to do
1. In a large bowl, mash the banana and then add olive oil. Add egg yolks, milk and vanilla, mix well. Place egg whites in a large mixing bowl.
2. Add flour, salt, baking powder and sugar. Mix everything gently but well, until just barely combined. Using a handheld mixer, whip egg whites on high speed until they become (medium) stiff peaks. Gently fold egg whites into the waffle batter.
3. Grease and heat waffle iron. Place about 1/3 of waffle batter, about about 12-15 chocolate chips and cook until waffle reaches desire color and texture (i like mine golden brown and crispy).
4. Repeat process until all the batter has been used. This usually yields about 6-8 waffles, depending on the iron. Serve immediately with butter and syrup, or whatever your heart desires!

- When measuring your flour, be sure not to scoop your measuring cup into the flour (that is too much flour!) You want to spoon your flour into your measuring cup (spoonful by spoonful) until the cup is full. Then use a knife to scrape off the top, excess flour.
