About This Recipe

This recipe is a tribute to the flavors I didn’t fully appreciate until I became an adult. I don’t know what it is, but toasted coconut is so comforting. And now, I keep finding myself drawn to it. Especially when paired with bright, fresh lime. It feels tropical, vibrant, and like a little trip to paradise. I also have found myself craving more and more blondies recently… so this is how these Lime & Toasted Coconut Blondies came to be!

What I love about blondies is how unfussy they are, but how much flavor you can build into them. They have that soft, chewy, almost caramel-like base that feels like the perfect blank canvas for all the good stuff. In this version, they become something a little more elevated and a little more unexpected, with layers of texture and flavor in every bite.

Brown butter brings a deep, toasty richness that makes everything feel more complex, while still staying simple and familiar. And then there are the macadamia nuts (my favorite nut!) The perfect crunch and buttery bite that take these blondies from soft and sweet to something truly special. Together, it’s a balance of chewy, crisp, nutty, and bright that keeps you going back for just more than “just one” !

Key Ingredients

Toasted Coconut & Macadamia Nuts – Bring a delicious tropical flavor to these blondies. The coconut adds sweetness and texture, while the buttery, rich macadamia nuts provide a satisfying crunch. Toasting both ingredients enhances their natural flavors and makes them even more irresistible.

White Chocolate – Adds pockets of creamy sweetness throughout the blondies. Its smooth, buttery flavor complements the toasted coconut and macadamia nuts beautifully while balancing the bright citrus notes from the lime.

Brown Butter – One of the secret ingredients that takes these blondies to the next level. As the butter cooks, the milk solids caramelize, creating a rich, nutty flavor that adds depth and warmth to every bite. It pairs especially well with the tropical ingredients and fresh lime.

Brown Sugar – Contributes moisture, chewiness, and a subtle caramel flavor. Its rich molasses notes complement the brown butter and create the soft, fudgy texture that makes blondies so irresistible.

Granulated Sugar – Helps balance the richness of the brown sugar while contributing to the blondies’ lightly crisp edges. Together, the two sugars create the perfect texture and sweetness.

Cornstarch – A small amount of cornstarch helps create an extra tender, soft blondie. It keeps the bars from becoming too dense and contributes to their melt-in-your-mouth texture.

All-Purpose Flour – Provides the structure that holds these blondies together while still allowing them to remain soft and chewy. Be careful not to overmix once the flour is added to ensure the best texture.

Flaky Sea Salt – Balances the sweetness and highlights the flavors of the brown butter, coconut, macadamia nuts, and white chocolate. It also pairs beautifully with the bright lime, helping every ingredient shine.

Lime – Fresh lime zest brings a vibrant, citrusy brightness that balances the rich, buttery flavors in these blondies. Its zests cuts through the sweetness and pairs beautifully with the toasted coconut, macadamia nuts, and white chocolate, creating a dessert that is both indulgent and refreshing.

FAQ’s

Yes! These blondies actually taste even better the next day as the flavors deepen and the brown butter, lime, and toasted coconut meld together. You can bake them a day in advance and store them covered at room temperature.

Absolutely. Wrap tightly and freeze for up to 3 months. Thaw at room temperature or warm in the oven at 350 for about 5 minutes for that “just-baked” texture.

Technically no, but it makes a huge difference if you do. Toasting deepens the flavor, adds crunch, and brings out that warm, nutty richness that pairs so well with the brown butter and lime.

Ah the most common error with blondies! This usually means they were overmixed or overbaked. Mixing too much adds air (making them cakey), and even a few extra minutes in the oven can dry them out. Pull them out when the center still looks slightly underdone—they’ll finish setting as they cool.

Yes! I love to use Bob’s 1:1 gluten free flour. Just swap out the regularly flour and use the same amount of GF flour.

Stored in an airtight container, they’ll keep for about 3–4 days at room temperature. I don’t recommend storing the blondies in the fridge as they can dry out and lose their fudgey texture.

Helpful Tips

Brown the butter carefully: Watch it closely once it starts foaming—those golden brown bits are where the flavor is. Remove it from the heat as soon as it turns a deep amber and smells nutty.

Don’t overmix the batter: Once the flour goes in, mix just until combined. Overmixing can make the blondies dense instead of soft and chewy.

Let the brown butter cool slightly: If it’s too hot, it can melt the sugars and change the texture of the batter. Let it cool until warm, not hot, before mixing.

Use parchment paper with overhang: This makes it easy to lift the blondies out of the pan cleanly for neat slicing.

Chill before slicing for clean cuts: If you want bakery-style squares, let them cool completely and even chill briefly before cutting.

Don’t overbake: For the best chewy texture, pull the blondies from the oven when the edges are set and lightly golden but the center still looks slightly underdone. They will continue to set as they cool in the pan, and this is what keeps them soft, fudgy, and moist instead of dry.

Sprinkle flaky sea salt on top: A final pinch of flaky sea salt right after baking enhances the lime, coconut, and brown butter and keeps the sweetness balanced.

Don’t skip the toast: Toasting the coconut and macadamias transforms them from basic mix-ins into standout flavor and texture moments in every bite.

Ingredients

Blondies

  • 1 + 1/4 cup (284 g) unsalted butter
  • 2 tbsp (12 g) lime zest (about 2 limes)
  • 1 cup (200 g) light brown sugar, packed
  • ½ cup (100 g) granulated sugar
  • 2 large eggs + 1 egg yolk, room temperature
  • 1 tsp (5 g) vanilla extract
  • 2 cups (240 g) all-purpose flour
  • ½ tsp (3 g) baking soda
  • ½ tsp (2 g) baking powder
  • 1/2 tbsp (4 g) cornstarch
  • 1 tsp (6 g) salt
  • 1/2 cup (74 g) macadamia nuts, roughly chopped
  • 3/4 cup (60 g) sweetened coconut
  • 2.2 oz (62 g) good quality white chocolate, roughly chopped, plus more for topping
  • Flaky sea salt for topping (highly recommended)

Instructions

Enable Step-by-Step Mode
  • To toast the macadamia nuts and coconut, preheat your oven to 325°F (165°C). Spread the shredded coconut in an even layer on one side of a large baking sheet lined with parchment paper. Spread the nuts on the other side.
  • Bake for 5–8 minutes, stirring once or twice, until the coconut is lightly golden and both are fragrant. Remove from the oven immediately and transfer to a bowl or plate to cool completely.
  • Coconut can go from golden to burnt very quickly, so keep a close eye on it during the last few minutes of toasting.
  • Raise the oven temperature to 350°F (175°C). Line an 9×9-inch (22.86 cm) pan with parchment paper, leaving a little overhang (for easy removal later).
  • In a small bowl, mix the lime zest and both the sugars. As you mix, press the zest into the sugars to help release all the oils. *This will create a strong lime flavor to the blondies. Then set the bowl to the side.
  • To brown the butter- Add the butter to a light-colored saucepan or skillet and place it over medium heat. *A light-colored pan makes it easier to see when the milk solids begin to brown.
  • Allow the butter to melt completely, stirring occasionally. As it cooks, the butter will start to foam and sputter- this is normal. Continue stirring.
  • As the foam begins to subside, you'll notice golden-brown specks forming on the bottom of the pan and a rich, nutty aroma developing. Keep a close eye on it at this stage, as the butter can brown quickly.
  • Once the milk solids are a deep golden brown and smell toasted and fragrant, remove the pan from the heat immediately. Pour the browned butter, including all of the flavorful browned bits, into a heat-safe bowl. We don't want the butter to continue to cook. Let the butter cool for about 30 minutes.
  • Before moving onto the next step, you will want ensure that your brown butter measures approximately 1 cup (220-225 g) after cooking. This is normal to have less than when you started, as butter loses water aduring browning.
  • In a large bowl, using a rubber spatula or hand whisk, mix together the 1 cup of cooled browned butter and the lime sugars. Add in the eggs and yolk one at a time, then mix in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, cornstarch, and salt.
  • If using a hand whisk, switch to a rubber spatula for the next step.
  • Using a rubber spatula, gradually fold the dry mixture into the wet ingredients until just combined (don’t overmix). Then fold in the toasted coconut, nuts and white chocolate. Mix until just combined.
  • Pour the blondie batter into the prepared pan. Bake for 23-25 minutes, until the edges are golden and a toothpick inserted in the center comes out mostly clean (a few wet crumbs are okay, i like these blondies to be a little underbaked and gooey). Note: Ovens do vary so please focus more on visual cues than time.
  • Top the blondies with more white chocolate if desired. Sprinkle with flaky sea salt.
  • Let blondies cool completely in the pan on a wire rack. Then lift out the blondies with the parchment, cut into squares.
  • Storage: Store in an airtight container for 3–4 days. Keeping them tightly covered helps maintain their soft, chewy texture.
