A decadent treat with a twist! Crispy, chewy Rice Krispies Treats with rich, buttery salted caramel carefully weaved throughout. These Rice Krispies Treats are a perfectly balanced bite of sweet and salty!

Ingredients

Brown Butter Rice Krispies

  • 1 stick butter + 2 tbsp
  • 12 oz mini marshmallows, divided
  • 6 cups rice cereal
  • pinch salt
  • 1/2 tsp vanilla extract
  • salted caramel sauce (the best homemade salted caramel)

What to do

1. Over medium/low heat, place the stick of butter in a saucepan, melt and cook. Continue cooking until butter foams and releases an aromatic, nutty smell. Butter should be turning a golden color at this point. When you see brown bits, remove from the stove top, and pour butter into a larger saucepan, or dutch oven (see more tips below for browning butter). Grease an 8×8 square pan with butter.

2. Place the other 2 tbsp of butter into the pan with the brown butter. Mix until melted. Add 10 oz of marshmallow to the pan, reserve the other 2 oz for later. Using a spatula, stir marshmallows and butter until mix is smooth. Add salt and vanilla.

3. Remove pan from the heat. Pour in cereal and mix. Add the remaining marshmallows to the mixture, stir and pour half of this mix into a prepared pan. Press mix evenly throughout the pan. Layer in about 1/3-1/2 cup salted caramel sauce. Then press in remaining cereal. Let the cereal set for about 30-50 minutes. Slice and enjoy!

Do not overheat the marshmallows. Gently melt them at a low heat. Once melted, turn off the heat. It also helps to store the rice krispies in an airtight container so that they do not become stale or dry out.

Here are some important Pro tips by Maude

  • Note: This recipe calls for a pretty large pot to hold the rice krispies mixture. You can get a pot like this
  • Making brown butter can be a little tricky. As you cook your butter, it will take a while for it to foam and release the nutty fragrance. Don’t get discouraged or impatient- it takes several minutes. Also, do not leave the butter in the pan once it has browned, it needs to be removed from all heat and transferred to a heat safe bowl. Make sure to get all the brown bits out of the pan too- those bits have all the flavors!
  • When I pour my butter into a heat proof bowl, I use a glass bowl or a pyrex measuring cup. Those handle the heat quite well. You can order off of amazon!
